  • Cultivated in Quercy since the Middle Ages, saffron production reached its peak in the 15th/18th centuries. In recent years, the cultivation of Quercy saffron has been revived. Saffron is a 20 to 40 cm high perennial plant with purple flowers. When separated and dried, these pistils are the famous red gold.
